Baked Chicken Nuggets! These make the BESTTT meal prep and they reheat so well because they are made with ground chicken instead of chunks of chicken breast.

I started off with some heirloom ground chicken, added a few simple spices, a quick breading, sprayed them with some avocado oil, and baked them in the oven! (They also can be cooked in the air fryer)

Kielbasa Risotto! It’s no secret I love risotto and I am always looking for fun ingredients to add into it to make a delicious weeknight meal.

I sautéed the kielbasa first with the onion and garlic to create a super flavorful base layer, and then the rest of the meal cooks into the flavor. It’s so good!

INGREDIENTS:

1 cup Arborio Rice
10 oz Sliced Sausage
1 tbsp Butter of Olive Oil
1/2 Vidalia Onion finely diced
1 tbsp minced garlic or 4 garlic cloves, minced
1/4 cup White Wine (optional, but recommend)
4-5 cups Chicken Broth use either low sodium or substitute 2 cups of regular chicken broth with water
1 cup Pecorino Cheese freshly grated
a few handfuls Fresh Spinach
