Pumpkin Risotto with Crispy Pancetta and Fried Sage!
y’all know how much I love risotto and how much I love a seasonal moment! This dish is the best of both worlds!

I fried up the pancetta and sage first, used half in the recipe while it was cooking, and the other half as a delicious topping with fresh parmesan.

I think risotto is pretty easy to make, it just requires a lot of stirring. But, it is quite forgiving. You can see in the video that I only add the next cup of broth once the last cup of broth is just about absorbed into the rice.

These Sweet and Savory Meatballs are a seasonal spin on the classic crockpot grape jelly meatballs. Only THREE INGREDIENTS and always a crowd pleaser. The combo of the sweet jam-like butter, and the savory steak sauce combine to create a perfect little meatball sauce. I serve these with a side of mashed potatoes and roasted broccoli.

If you’ve been in my stories, you’ve seen me make these three times since the end of August. I have been taking advantage of “Pumpkin Butter” being back in stock at #traderjoes . My wife has worked for TJs for a really long time and one of her old coworkers, Amanda, created this recipe for the Trader Joe’s demo station circa early/mid 2010s. But it slaps, and it needs to live on forever! TJs used to sell their own steak sauce but its long gone so we are using A1.

Also, for those who are wondering, pumpkin butter is really similar to any sweet jelly or jam with just a touch of warm spices. It does not taste like pumpkin spice.

1 bag (20oz)of Party Size Meatballs
1 jar (10oz)Pumpkin Butter (or preferred jelly)
5 oz A1 Steak Sauce

Cook on low for 6 hours, stirring a few times during the process so that everything is evenly coated.

This Garlic Bread is stuffed with creamy butter, garlic, fresh herbs, and @StellaCheeses delicious Parmesan and Fontinella [ad]

This is the best garlic bread I’ve ever had. When you stuff the bread, both sides of each slice soak up all of the flavor. It was so good, my mom has already added it to her Thanksgiving dinner menu. 😂 Seriously, it is a statement piece! I love using Stella Cheeses because of their fresh, delicious, and salty taste! Stella Cheeses are the absolute #StellaOfTheShow

Recipe below makes 8 servings

Prep Time: 15 minutesCook Time: 30 minutes

INGREDIENTS

• 1 long Seeded Italian Bread (24” long)

• 8-10 cloves of Garlic

• 1/2 cup Salted Butter (room temp)

• 3 tbsp Olive Oil (extra virgin)

• 1/4 cup Fresh Parsley

• 1/2 tsp Sea Salt

• 1/4 tsp Black Pepper

• 1 cup freshly-grated Stella Parmesan Cheese

• 1 cup freshly-shredded Stella Fontinella Cheese

INSTRUCTIONS

• Preheat oven to 400F

• Add all of the ingredients except for the bread and cheese into the bowl of a food processor and mix until a creamy paste is formed.

• Add the paste to a bowl and then add in your shredded Stella Parmesan Cheese and Stella Fontinella Cheese.

• Carefully cut your bread by making a cut every 1.5 inch being careful not to cut all the way through to the bottom. You want to make sure the loaf of bread stays intact so that you can stuff it with the garlic butter mixture.

• Equally distribute the garlic butter in between all of the slices of bread. Use all of the garlic butter.

• Wrap the bread tightly in aluminum foil

• Bake for 25-30 minutes.

I didn’t grow up with taco seasoning, I grew up with Adobo. IYKYK 🇵🇷 You can use either/or to season your meat, and then fold it up with some cheese in a tortilla. Bake till crunchy and then dippp away! The dip is a combination of your favorite salsa and some sour cream. Enjoy!
