Irish Potachos

Ingredients
  

  • 3 Potatoes Large
  • 7 oz Irish Cheddar
  • Corned Beef Leftover, works best
  • 1 Avocado
  • Green Onions
  • Oil I used Avocado Oil

Instructions
 

  • Rub oil over potato slices, season with salt, and bake them in a single layer at 400F until golden brown(about 25 minutes)
  • Shred the cheese
  • Once potatoes are brown, remove them from the oven. Let them cool slightly so that they can crisp up further.
  • Top with chopped corned beef pieces and cheese
  • Put back in the oven until cheese melts
  • Remove from oven, top with green onions, and avocado!
