Thaw the spinach and squeeze out all moisture.
Add 1.5 tbsp Butter or Cooking oil to a pan.
Add green onions, stir, and cook for 4 minutes
Add spinach, lemon, salt, pepper, and garlic powder. Cook for 6 – 7 minutes or until moisture has evaporated.
Add half and half, stir and remove from heat.
Add feta and stir.
Roll out your pizza dough halves into two 9 inch circles. Cut each circle into 8 equal slices. Place 1.5 tbsp filling in each slice and roll up.
Place roll-ups on a parchment lined baking sheet.
Mix egg yolk and 1 tbsp water in a small bowl and baste the top of each roll-up.
Top each with Maldon Salt, or other coarse salt.
Bake for 15-17 minutes(or until the top is brown) at 425°F.
