Freezer Breakfast Burritos

The best type of meal prep! Eat a delicious breakfast all week long!

Equipment

  • Parchment Papper

Ingredients
  

  • 7 Tortillas
  • 8 Eggs Scrambled
  • 1 cup Cheddar Cheese Mixed into the scrambled eggs
  • 1 bag Baby Spinach or other tender greens
  • 1 Shallot
  • 1 large Sweet Potato or Regular Potato
  • 8 Breakfast Sausage Links I used a maple chicken breakfast sausage
  • olive oil
  • salt, garlic powder, and other spices

Instructions
 

  • Finely dice the potato and shallot and add them to a pan with a little olive oil. Add some salt, garlic powder and other spices you might like. I used some cumin because I love it! Cook until soft. Set Aside in a bowl
  • While the potatoes are cooking, slice the breakfast sausage into coins and then heat in a pan. My sausage was already fully cooked so I just browned them in a little olive oil. Once they were brown, I set them aside in a bowl.
  • Beat the eggs and cook on medium low heat. Don't move them too much, but as they start to set, carefully fold them in the middle of the pan. When they are almost completely set, add the cheese to the eggs and gently fold it into the eggs. Once the eggs are set, add the mixture to a bowl.
  • Cook the greens with a little olive oil, salt, and garlic powder. Once wilted, add to a bowl.
  • Cut 7 pieces of parchment paper and 7 pieces of aluminum foil
  • Lay down a piece of parchment paper, put a tortilla on top, add your ingredients, but not too much that it will be hard to roll. Roll your burrito by folding over the sides first and then rolling the burrito up. Then hold it firm while rolling it in the parchment paper, and then finally the aluminum foil to hold it together until you eat it. I made a video and added it above for a visual.
  • Repeat with the rest of the ingredients and add to a freezer bag for storage.
