French Toast with Caramelized Peaches

French Toast with Caramelized Peaches is a delicious late summer breakfast made with seasonal peaches.

Ingredients
  

  • 6 slices Brioche Bread
  • 2 Eggs
  • 1/4 cup Half and Half any milk is ok
  • 1.5 tsp Vanilla Extract
  • 3 Ripe Peaches peeled, pitted, and sliced
  • 3 tbsp Maple Syrup
  • 1/4 tsp Cinnamon
  • 4 tbsp Butter

Instructions
 

  • Peel, Pit, and Slice all peaches. Add to a bowl with the maple syrup, 1/2 tsp vanilla extract, and 1/8 tsp of cinnamon. Set Aside.
  • In a separate bowl, combine the eggs, half and half, 1 tsp of vanilla, and 1/8 tsp of cinnamon.
  • Heat a large skillet on medium heat and add 1 tbsp of butter
  • Dunk a slice of bread into the egg mixture, and then add it to your hot pan. Repeat with he rest of the bread. You may need to cook this in two batches.
  • Once bread is golden brown on both sides, add to a plate and set aside.
  • Add the remaining 3 tbsp of butter to the pan, and once it melts, add the peach mixture to the pan, mixing every minute or so.
  • Add a pinch of sea salt to the peach mixture and mix.
  • Cook for 5 minutes and then remove from the heat. Add as a topping on two slices of french toast, and then top with whipped cream.
