Instructions
Add cottage cheese to a food processor or high speed blender. Blend until just smooth. Do not over blend as it will become more liquidy.
Swirl pesto into cottage cheese
Optional - If you want to use pine nuts, add your pine nuts to a dry pan on medium low heat. Toast them until they start to get golden in color. Shake the pan around to get all sides.
Dice a tomato and add to the top of the dip. Optional - sprinkle a little sea salt on the tomatoes
Keep the dip refrigerated until you are ready to serve. It will firm up slightly in the refrigerator.
