Whipped Cottage Cheese Dip

This Creamy Cottage Cheese Dip with Pesto, Diced Tomatoes, and Toasted Pinenuts can be served with warm grilled bread or fresh veggies.

Ingredients
  

  • 16 oz Whole Milk Cottage Cheese
  • 5 tbsp Pesto
  • 1 large Tomato
  • 2 tbsp Pine Nuts
  • 5 Items for Dipping bread, carrots, celery, crackers, etc
  • sea salt optional

Instructions
 

  • Add cottage cheese to a food processor or high speed blender. Blend until just smooth. Do not over blend as it will become more liquidy.
  • Swirl pesto into cottage cheese
  • Optional - If you want to use pine nuts, add your pine nuts to a dry pan on medium low heat. Toast them until they start to get golden in color. Shake the pan around to get all sides.
  • Dice a tomato and add to the top of the dip. Optional - sprinkle a little sea salt on the tomatoes
  • Keep the dip refrigerated until you are ready to serve. It will firm up slightly in the refrigerator.
