Pineapple Shrimp Fried Rice

Ingredients
  

  • 1 lb Shrimp if using frozen shrimp, they should be thawed before you begin cooking
  • 4 Cups Cooked Rice leftover works best
  • 5 tbsp Salted Butter separated
  • 2 Eggs optional
  • 5 Green Onions diced
  • 2 cloves Garlic minced
  • 1/2 cup Pineapple diced
  • 4-5 tbsp Soy Sauce
  • 2 tsp Japanese BBQ Sauce
  • 1/2 cup Green Peas optional
  • 1.5 tsp Sesame Oil
  • 1/4 tsp Sea Salt

Instructions
 

  • If you want to add egg to your fried rice, you should cook it first and then keep it on the side while you cook the other ingredients.
  • Make a soft scramble so that they are not over done when they get tossed into the rice. Mix the eggs in a bowl really well, add a pinch of salt and pepper to them and then add them to a greased pan. Scramble in the pan until they are just lightly cooked. Then add to a plate.
  • Add 2 tbsp of butter to a pan and heat on medium heat. Once the pan is hot, add your shrimp, plus 1 tbsp of soy sauce, a pinch of sea salt, and a little drizzle of sesame oil. Cook on each side for 2 minutes and then set aside on a plate, while leaving the juice in the pan.
  • Add 1 tbsp butter to the pan along with your diced green onions and minced garlic. Once it is fragrant add your rice and the remaining butter and mix it well.
  • Next, add your pineapple, green peas (optional) soy sauce, Japanese BBQ sauce, and sesame oil. Once it is fully incorporated, let it heat up without moving it so that the rice gets a little crispy.
  • Once rice crisps up in a few areas, add your scrambled eggs and shrimp back into the rice and mix.
  • Add some hot sauce (optional) and enjoy!
