Spinach and Feta Roll-Ups

An easy to make appetizer made with pizza dough, spinach, and feta cheese

Ingredients
  

  • 10 oz Frozen Spinach drained
  • 6 Green Onions diced thin
  • 6 oz Feta Cheese
  • 1 Ball Fresh Pizza Dough cut in half
  • 1 Lemon juiced
  • 2.5 tbsp Half and Half
  • 1.5 tsp Garlic Powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 egg yolk
  • Coarse Salt for topping
  • Butter or Oil

Instructions
 

  • Thaw the spinach and squeeze out all moisture.
  • Add 1.5 tbsp Butter or Cooking oil to a pan.
  • Add green onions, stir, and cook for 4 minutes
  • Add spinach, lemon, salt, pepper, and garlic powder. Cook for 6 – 7 minutes or until moisture has evaporated.
  • Add half and half, stir and remove from heat.
  • Add feta and stir.
  • Roll out your pizza dough halves into two 9 inch circles. Cut each circle into 8 equal slices. Place 1.5 tbsp filling in each slice and roll up.
  • Place roll-ups on a parchment lined baking sheet.
  • Mix egg yolk and 1 tbsp water in a small bowl and baste the top of each roll-up.
  • Top each with Maldon Salt, or other coarse salt.
  • Bake for 15-17 minutes(or until the top is brown) at 425°F.
