Orzo Salad with Feta

Delicious warm summer salad that can also be eaten cold.

Ingredients
  

  • 12 oz Premade Grilled Chicken I buy from Trader Joes, but you can cook your own grilled chicken and add it to this recipe
  • 16 oz Orzo cooked
  • 6 oz Feta Cheese
  • 1/4 cup Red Onion chopped very fine
  • 1.5 Cups Persian Cucumbers chopped
  • 2 cups Grape or Cherry tomatoes halved
  • 2 tbsp Olive Oil

Instructions
 

  • Cook the Orzo per the directions on the package
  • Chop up the grilled chicken and heat it in a pan
  • Once the orzo is cooked, drain it, and then add it to a big bowl. Pour the olive oil on top, and mix it around.
  • Add the grilled chicken to the bowl, followed by the cucumbers, tomatoes, red onion, and feta cheese. Mix it around until fully incorporated.
