Orzo Salad with Feta
Delicious warm summer salad that can also be eaten cold.
- 12 oz Premade Grilled Chicken I buy from Trader Joes, but you can cook your own grilled chicken and add it to this recipe
- 16 oz Orzo cooked
- 6 oz Feta Cheese
- 1/4 cup Red Onion chopped very fine
- 1.5 Cups Persian Cucumbers chopped
- 2 cups Grape or Cherry tomatoes halved
- 2 tbsp Olive Oil
Cook the Orzo per the directions on the package
Chop up the grilled chicken and heat it in a pan
Once the orzo is cooked, drain it, and then add it to a big bowl. Pour the olive oil on top, and mix it around.
Add the grilled chicken to the bowl, followed by the cucumbers, tomatoes, red onion, and feta cheese. Mix it around until fully incorporated.
