Air Fryer Zucchini Fries

Air Fryer Zucchini Fries with a creamy chimichurri sauce

Ingredients
  

  • 1 large Zucchini or two medium size zucchinis
  • 1/2 cup Flour
  • 1 cup Seasoned Bread Crumbs
  • 1/2 cup Grated Parmesan Cheese shaker can works best
  • 3/4 tsp Garlic Powder
  • Avocado Oil Spray optional

Instructions
 

  • Cut your zucchini into fries that are about 1/2 inch thick and 3 - 4 inches long
  • Lay them on a paper towel to absorb some of the water
  • Lay out three bowls. Add the Flour and Garlic Powder to one bowl. Scramble the eggs in another bowl. Add the breadcrumbs and parmesan cheese to the third bowl
  • Open up your air fryer so that you can add each fry to the air fryer as soon as you coat it. If you want to use avocado oil spray, you can spray the bottom of the basket. However, this step isn't necessary.
  • Dip the zucchini fry in the flour mixture, then the egg mixture, and then the breadcrumb mixture. Add to the Air Fryer basket. Repeat until the basket is full. Top with a little oil spray if you are using that.
  • Cook at 400F for 8-9 minutes. Repeat with the second batch.

Notes

I made a creamy chimichurri dipping sauce for my fries by combining a little store bought chimichurri with a little bit of sour cream. Zucchini also goes so well with basil and garlic. A creamy pesto sauce would be delicious with this as well as a quick marinara sauce.
