Shrimp Fajitas

These shrimp fajitas are fresh, smokey, and so satisfying. They are served with avocado crema in a soft flour tortilla.

Ingredients
  

  • 1 lb Shrimp I used frozen wild Argentinian shrimp
  • 10 Fajitas Size Flour Tortillas Similar to Street Taco size
  • 2 Bell Peppers sliced thin
  • 1/2 Yellow Onion sliced thin
  • 1/2 tbsp Oil
  • 1 Lime juiced
  • 1 tbsp Cilantro

Fajita Seasoning

  • 1/2 tsp Sea Salt
  • 1/2 tsp Chipotle Pepper Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Black Pepper

Avocado Crema (optional)

  • 1 Ripe Avocado peeled and pitted
  • 2 Limes juiced
  • 1/3 cup Sour Cream
  • 1/4 tsp salt
  • 2 tbsp Water plus a little more

Instructions
 

Skillet Method

  • Slice the Peppers and Onions thin and add to a hot pan with oil. Cook until peppers and onions start to char.
  • While the peppers and onions are cooking, thaw your shrimp, Put them in a colander and run cold water over them for 5 minutes.
  • Gather your spices. Add all the spices into a small bowl so they are ready once you add the shrimp to the skillet.
  • Add the shrimp to the pan, followed immediately by the spices and mix together with the peppers and onions. Add a generous squeeze of lime on top.
  • Cook the shrimp for a little under 2 minutes per side.
  • If you want to heat up your tortillas, add them to a sheet pan and heat them up at 350F for a few minutes.

Sheet Pan Method

  • In a large bowl, toss together thawed shrimp, thinly sliced bell pepper and onions, olive oil, and seasonings. If you want, you can skip the bowl and mix everything on the sheet pan and then toss it to coat.
  • Bake the fajita mixture in the oven at 450 degrees for about 8 minutes.
  • Then switch the broiler on and let the shrimp and bell pepper blacken a little for 2 minutes.
  • Remove Fajitas mixture from the oven and turn off the broiling function.
  • If you want to heat up your tortillas, add them to a seperate sheet pan and heat them up at 350F for a few minutes.

Avocado Crema

  • Add all ingredients to a blender and combine.

Notes

I got a nice char on my tortillas for my photos by putting the tortillas directly over my burners of my gas stove. You have to act quick, so if flames scare you, definitely ask for some help from a friend. I use a silicone tipped tong to move the tortillas around so that the flame does not burn any one spot. Also, keep your flame low. Tortillas cook very fast! You can also try this same method over a gas grill!
