One Pot Beef Stroganoff

An easy one pot beef stroganoff recipe made with ground beef, egg noodles, spices, and a lightened up creamy sauce.

Ingredients
  

  • 1 lb Lean Ground Beef 90% or 95% lean
  • 3 tbsp Butter
  • 10 oz Sliced Mushrooms
  • 1/2 Medium Onion diced
  • 3 Garlic Cloves minced
  • 1/2 tsp Paprika you can also use Lawry's Seasoned Salt
  • 3 tbsp flour
  • 1/4 cup White Wine
  • 4 cups Beef Broth low sodium
  • 1 1/2 tbsp Reduced Sodium Worcestershire Sauce
  • 1/2 tbsp Dijon Mustard
  • 8 oz Egg Noodles
  • 1/4 tsp sea salt
  • 1/2 cup Greek Yogurt

Instructions
 

  • Add the button to a large skillet on medium heat. Once the butter melts, add the sliced mushrooms plus half of the salt and cook the mushrooms until they start to brown and crisp up
  • Add the diced onions, minced garlic and stir around. Then, add the ground beef, paprika, and the remaining salt. Cook until the beef is no longer raw.
  • Add the flour to the pan and coat the beef. Let the flour brown for one minute.
  • Add the wine and raise the heat to high. Let it start to boil so that you cook out the alcohol but keep the delicious wine taste.
  • Add the worcestershire sauce, dijon, beef broth, and noodles. Let the liquid come to a boil, then reduce the heat to low and cover. Cook for 8-10 minutes or until noodles are cooked.
  • Remove cover and turn off the heat. Add greek yogurt or sour cream and mix.
