This easy breakfast casserole is also called “a Strata” or a “Savory Bread Pudding”. It doesn’t really matter what it is called, but it is delicious.

You bake the eggs and milk into the bread. The bread absorbs the egg mixture and it gets fluffy like french toast, but then the tops of the bread get crispy while baking. The flavors of spinach and bacon turn this dish into savory breakfast heaven!

Ingredients
1 pack of Martin’s Sweet Dinner Potato Rolls
12 oz Shredded Chicken
8 oz Cream Cheese, room temperature
1/2 cup Mayonnaise
15 oz Frozen Spinach, thawed and drained
15 oz Canned Artichoke Hearts, drained and chopped
1/2 cup Mozzarella Cheese, shredded
1/4 cup Parmesan Cheese, shredded
7 Cloves of Garlic, minced
1/2 tsp Sea Salt
1/8 tsp Black Pepper
12 slices Mozzarella cheese, you can also use Muenster or a Mild Cheddar
2 tbsp Butter

Instructions
1. Add the cream cheese, mayo, spinach, artichokes, shredded mozzarella cheese, shredded parmesan, garlic, salt, and pepper to a medium bowl. Mix well.
2. Add the chicken to the spinach and artichoke mixture and mix well.
3. Preheat your oven to 350F
4. Slice your Martin’s Sweet Dinner Potato Rolls in half so you can separate the tops from the bottoms
5. Place the bottom rolls on a baking sheet and then add half of your sliced cheese to the rolls.
6. Next add your chicken spinach and artichoke mixture on top of the cheese. You will likely have some extra that you can heat up in a dish and serve with chips.
7. Add the other half of the sliced cheese to the sliders, and then place the tops of the rolls on top.
8. Cover with aluminum foil and bake for 15 minutes, then remove the foil and bake for an additional 10-15 minutes.
9. When it comes out of the oven, brush some melted butter on top of the rolls.
