This easy breakfast casserole is also called “a Strata” or a “Savory Bread Pudding”. It doesn’t really matter what it is called, but it is delicious.

You bake the eggs and milk into the bread. The bread absorbs the egg mixture and it gets fluffy like french toast, but then the tops of the bread get crispy while baking. The flavors of spinach and bacon turn this dish into savory breakfast heaven!

How to make Wonton Cups:
1. Press wonton wrappers into a mini cupcake pan and spray them with avocado oil.
2. Bake the wonton wrappers for 10 minutes at 350F.
3. While it is baking, make the crab Rangoon dip in a bowl and mix.
4. After the wonton cups finish their first bake, fill each wonton cup with the Crab Rangoon filling.
5. Bake for 8-10 minutes
6. Top with sweet chili sauce

1. Save yourself time and energy and use a food processor grating disc to shred your potatoes.
2. Use Yukon gold potatoes. You don’t need to peel them because the skin is thin and golden in color. It will not ruin the color of your latkes. Also, so many nutrients are in the skin.
3. Use the food processor for your onions too! This turns them into a paste and blends so well into your potatoes.
4. Throw half of your grated potatoes into the food processor to turn them into a puree. This gives the latkes a combination of a tender middle and a crispy outside. It truly makes the best latkes!
5. Use a cheesecloth to remove all of the excess water from your potatoes and onions. This makes them so crispy!
6. Season your latkes normally and then fry up one test latke to make sure you like the taste. If it needs more salt or seasoning, add a little bit more.
