This recipe is a spin on my white chicken chili recipe. I combined shredded chicken breast, white beans, green chiles, cream cheese, and shredded cheese, along with all my usual favorite seasoning blend. [ad] Baked Chipotle Turkey Tacos with Avocado Crema using ground turkey from @ShadyBrookFarms

I grew up eating a lot of pork, but I love using ground turkey as a leaner substitute in all of my recipes. It is a delicious and tasty source of protein, and I love using it in so many easy weeknight meals. From tacos to stir fries, lasagna to burgers, ground turkey is such a versatile meat to use. You can even make a large batch of these turkey tacos and eat them as leftovers or store the cooked chipotle ground turkey in the freezer for a future meal.

Recipe: (Can be doubled or tripled for meal prep)

1lb Shady Brook Farms Ground Turkey
1 tbsp olive oil
1 tsp Adobo seasoning
2 cloves garlic
1/2 tsp cumin
1/2 can of chipotle in adobo
12 mini flour tortillas
12oz shredded Monterrey jack cheese

Heat oven to 400F
Add oil to a frying pan and heat
Add the garlic and cook for 2 minutes.
Add the ground pork, adobo seasoning, and cumin. Once it is almost fully cooked, add in your chipotle in adobo and 1/2 cup of water. Bring mixture to a boil and mix until fully combined. Cook for an additional 5 minutes and then turn off the heat.
On an XL baking sheet lay out parchment paper and add your mini tortillas. Bake them alone for 3-5 minutes to get them slightly brown and pliable.
Remove the baking sheet from the oven, add a little cheese on top of half of each tortilla, then add a couple of spoonfuls of ground turkey, followed by a little more cheese.
Fold over each tortilla, making a crease on the corners to help the tortilla stay down. You can also use toothpicks to help them stay shut.
Bake the tacos for 7-10 minutes or until the tortillas start to get golden brown and the cheese melted.

Avocado Crema (optional) is a mixture of 1/3 cup of sour cream, 1 peeled avocado with pit removed, 1 garlic clove, 2 limes juiced, 2 tablespoons of water and 1/4 teaspoon of salt. Add everything to a food processor or nutribullet and combine.

These Sweet and Savory Meatballs are a seasonal spin on the classic crockpot grape jelly meatballs. Only THREE INGREDIENTS and always a crowd pleaser. The combo of the sweet jam-like butter, and the savory steak sauce combine to create a perfect little meatball sauce. I serve these with a side of mashed potatoes and roasted broccoli.

My wife has worked for TJs for a really long time and one of her old coworkers created this recipe for the Trader Joe’s demo station circa early/mid 2010s. But it slaps, and it needs to live on forever! TJs used to sell their own steak sauce but it’s long gone so we are using A1.

Also, for those who are wondering, pumpkin butter is really similar to any sweet jelly or jam with just a touch of warm spices. It does not taste like pumpkin spice.

1 bag (20oz)of Party Size Meatballs
1 jar (10oz)Pumpkin Butter (or preferred jelly)
5 oz A1 Steak Sauce

Cook on low for 6 hours, stirring a few times during the process so that everything is evenly coated.

[ad] These Bacon and Blue Cheese Pierogi are the perfect bite of savory goodness. I grew up eating traditional pierogi and I wanted to put a spin on this local Pennsylvania favorite by adding bacon and @treasurecavecheese.

The perfect pierogi has a super cheesy taste, so I knew that Treasure Cave Gorgonzola would pair perfectly with the potato filling. Their blue cheeses are aged 60-90 days and they have an exquisitely rich, delicious flavor. Grilled Cheese with Pumpkin Butter, Caramelized On

Grilled Cheese with Pumpkin Butter, Caramelized Onions, and White Cheddar Cheese. Slathered with butter or mayo on the outside.

Pumpkin Butter is really similar to Apple Butter, just made with pumpkin and a bit sweeter like fig jam. It is a sweet thick jam and it adds the perfect punch of sweetness that pairs with white cheddar.

Here is how to make it:
Sourdough Bread
Butter
A layer of pumpkin butter on one slice of bread
2-4 slices of cheddar cheese(per sandwich)
Caramelized onions (I made these ahead of time).

I cook this on medium heat and i use a cover on the pan to trap the heat in the pan so that the cheese melts at the same rate that the bread is browning.

This Apple Butter, Caramelized Onion, and White Ch

This Apple Butter, Caramelized Onion, and White Cheddar Grilled Cheese is so goood! If you peep my stories, then you know I am almost always cooking onions. So when I had some extra, I wanted to make a new Fall inspired grilled cheese.

Last year I made a pumpkin butter, caramelized onion, and white cheddar grilled cheese and this year I swapped the pumpkin butter for some apple butter and it obviously was incredible!

Details: @traderjoes Sourdough Bread, @traderjoes White Cheddar, @musselmans_official Apple Butter. Medium Low heat and cover the grilled cheese to help the cheese melt, while checking frequently to make the bottom isn’t getting too well done.
