Pork Rind Crusted Chicken Nuggets

Paleo and Keto Chicken Nuggets made with pork rinds instead of bread crumbs

Ingredients
  

  • 1 lb Chicken Breast or Thighs cut into nugget sized pieces
  • 1 Bag pork rind crumbles or pork panko
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 Eggs

Instructions
 

  • preheat oven to 375F
  • Pour 1/2 bag of pork rind crumbles into a bowl. Add more as needed
  • Season raw chicken Nuggets with salt and seasonings
  • Crack eggs into bowl and beat until combined. Add raw chicken Nuggets and coat well.
  • Add Nuggets into pork crumble mixture
  • Place Nuggets on a baking sheet and bake for 15 minutes, flip over and bake for an additional 5 - 7 minutes. If you are using an air fryer, cook at 390F for 14 minutes
  • If baking, once they are done baking, remove them from the oven and let them rest on the baking sheet for 5-7 minutes so they are easier to remove from the sheet.
