Grease a 2 quart baking dish and add your bagel pieces to the dish.
In a separate bowl, mix together the milk, eggs, salt, and pepper. Pour egg mixture over bagels.
Top with cooked sausage pieces, cream cheese pieces, green onions, and shredded cheese. Top with a few dashes of hot sauce (optional)
Cover dish and refrigerate overnight, or for at least 6 hours. This ensures that the bagels soak up the egg mixture.
Remove from fridge when you are ready to bake. Preheat oven to 350°F. Bake for 40 minutes covered, then remove cover and cook for an additional 10 to 15 minutes or until cheese is bubbly.
Let stand for 10 minutes before cutting
