Everything Bagel Breakfast Casserole

This everything bagel breakfast casserole is the perfect breakfast casserole! It combines everything bagels, eggs, sausage, and cream cheese to create a delicious and satisfying baked breakfast. It looks fancy, tastes delicious, feeds a large group, and is so easy to make! You prep this breakfast the night before and then just pop it in the oven the next morning!

I think everyone can assume I am a big fan of bacon, but when I am making a breakfast casserole or quiche, sometimes I want an ingredient that is a bit thicker than bacon. It creates a heartier bite and stands out more in the dish. That being said, bacon, sausage, or ham would be a wonderful addition to this overnight bagel breakfast casserole.

When I make this everything bagel breakfast casserole or my sourdough breakfast casserole I want it to feel like I am eating a breakfast sandwich in casserole form. I loved using bagels in this breakfast casserole. They were so easy to cut up and throw in a casserole dish. I bought a bag of everything bagels from the grocery store. You can use plain bagels, garlic bagels, or any style you want.

Everything Bagel Egg Bake

Making a breakfast casserole is a great time saving tool to have when you are hosting brunch or a holiday breakfast. You combine all of the ingredients the night before in a casserole dish and then you bake it the next morning. It is such a flavorful breakfast made with everyone’s favorite ingredients. Instead of having to prep individual breakfast for everyone, this dish has an everything bagel, egg, sausage, and cheese in every bite.

INGREDIENTS  

  • 6 eggs
  • 4 bagel cut into 8 equal pieces each
  • 2 cups milk
  • 6 breakfast sausage links cooked, cut into chunks
  • 4 oz cream cheese cut into small chunks
  • 2 green onions diced
  • 3/4 cup shredded cheese I used cheddar and monterrey jack
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • hot sauce optional

INSTRUCTIONS 

  • Grease a 2 quart baking dish and add your bagel pieces to the dish.
  • In a separate bowl, mix together the milk, eggs, salt, and pepper. Pour egg mixture over bagels.
  • Top with cooked sausage pieces, cream cheese pieces, green onions, and shredded cheese. Top with a few dashes of hot sauce (optional)
  • Cover dish and refrigerate overnight, or for at least 6 hours. This ensures that the bagels soak up the egg mixture.
  • Remove from fridge when you are ready to bake. Preheat oven to 350°F. Bake for 40 minutes covered, then remove cover and cook for an additional 10 to 15 minutes or until cheese is bubbly.
  • Let stand for 10 minutes before cutting
