2-4ozPestoYou can use your favorite variety. I would add three tablespoons and then see if you like how saucy it is. Add more if needed.
Instructions
Boil the tortellini until they float. Drain and put into a bowl.
Heat up or cook grilled chicken and dice them into 1" bites
Pour the pesto over the tortellini, followed by the chicken, halved tomatoes and mix. Add more pesto if needed.
Add in mozzarella and give it a good mix. This dish can be eaten warm or stored in the fridge and then eaten cold.
Notes
I prefer this dish served warm because of the chicken. When I reheat this for lunch, I just put it in a microwaveable safe dish and heat it up. The mozzarella balls will melt a little, which I love. If you want to make this dish vegetarian, omit the chicken.
