Carrot Potato Latkes! Deliciously crispy fried pot Carrot Potato Latkes! Deliciously crispy fried potato pancakes! Latkes are traditionally eaten during Hanukkah to celebrate the miracle of oil! Here are the tricks my mom passed down to me to ensure I became a successful Potato Latke maker. 🥰

Comment “Recipe” below and I will send you the link to my recipe. You can also find it here: https://spinachandbacon.com/2019/12/18/carrot-potato-latkes/

1. Save yourself time and energy and use a food processor grating disc to shred your potatoes.
2. Use Yukon gold potatoes. You don’t need to peel them because the skin is thin and golden in color. It will not ruin the color of your latkes. Also, so many nutrients are in the skin.
3. Use the food processor for your onions too! This turns them into a paste and blends so well into your potatoes.
4. Throw half of your grated potatoes into the food processor to turn them into a puree. This gives the latkes a combination of a tender middle and a crispy outside. It truly makes the best latkes!
5. Use a cheesecloth to remove all of the excess water from your potatoes and onions. This makes them so crispy!
6. Season your latkes normally and then fry up one test latke to make sure you like the taste. If it needs more salt or seasoning, add a little bit more.

This recipe comes together so fast with the help of pre-seasoned breakfast sausage. You should use the kind that is raw so that it can cook into your puff pastry while it bakes.

If you are looking to make a festive holiday appet If you are looking to make a festive holiday appetizer, check out this easy-to-make Pig in a Blanket Wreath. All you need are 3 ingredients plus your choice of dipping sauce.

Ingredients
24 mini hotdogs
1 tube of 8 crescent rolls
rosemary sprigs

Instructions
1. Preheat the oven to 375F
2. Cut each crescent roll into 3 very long pieces.
3. Roll each mini hotdogs in a piece of crescent roll and place it on a parchment paper lined sheet pan. Repeat for all the hotdogs. Form a circle making sure each pig in a blanket is barely touching. As they bake, they will squoosh together to form a ring.
4. Cook for 18-20 minutes or until the crescent rolls are golden brown.
5. Carefully move to a serving dish, add rosemary in the middle, and a bowl for the condiments.

Mustard tastes best with hotdogs, but the ketchup looks prettier and more festive.
