Air Fryer Zucchini Fries

I love crispy battered vegetables. In fact, my love for them was a huge development for me on my journey to love vegetables. As a kid, I hated vegetables because they were all steamed, and low fat diets were all the craze so everyone was afraid of oil and butter. But as I got older I started to try vegetables in all of their forms, like velvety pureed soups, roasted, and fried! Now, I am a huge fan and so is my daughter. These Air Fryer Zucchini Fries give you all the crunch and flavor of regular fried zucchini fries, but they use absolutely zero oil and are ready in 20 minutes. Air Fryer Zucchini Fries with creamy chimichurri

Sometimes, zucchini can get a little soggy when you cook it. It is a delicate vegetable, and it retains a lot of water so you need to cook it specific ways in order to keep it crispy. These air fryer zucchini fries have a delicious coating which gets all crispy and protects the zucchini from getting soggy. It is like magic!! In the end you have a fry with a delicious crunchy coating and a tender zucchini on the inside.

Do you peel the Zucchini before making fries?

No, please don’t peel them. Just cut them into fry shape, coat them in the breading, and toss them in the air fryer.

What pairs well with Air Fryer Zucchini Fries?

I made a creamy chimichurri dipping sauce for my fries by combining a little store bought chimichurri with a little bit of sour cream. Zucchini also goes so well with basil and garlic. A creamy pesto sauce would be delicious with this as well as a quick marinara sauce.

How do you get the water out of Zucchini Fries?

After I cut the zucchini, I lay them out on a paper towel to remove any excess water. This also helps the coating stick to them better.

Ingredients for Air Fryer Zucchini Fries

EQUIPMENT

  • Air Fryer

INGREDIENTS  

  • 1 large Zucchini or two medium size zucchinis
  • 1/2 cup Flour
  • 2 Eggs
  • 1 cup Seasoned Bread Crumbs
  • 1/2 cup Grated Parmesan Cheese shaker can works best
  • 3/4 tsp Garlic Powder
  • Avocado Oil Spray optional

INSTRUCTIONS 

  • Cut your zucchini into fries that are about 1/2 inch thick and 3 – 4 inches long
  • Lay them on a paper towel to absorb some of the water
  • Lay out three bowls. Add the Flour and Garlic Powder to one bowl. Scramble the eggs in another bowl. Add the breadcrumbs and parmesan cheese to the third bowl
  • Open up your air fryer so that you can add each fry to the air fryer as soon as you coat it. If you want to use avocado oil spray, you can spray the bottom of the basket. However, this step isn’t necessary.
  • Dip the zucchini fry in the flour mixture, then the egg mixture, and then the breadcrumb mixture. Add to the Air Fryer basket. Repeat until the basket is full. Top with a little oil spray if you are using that.
  • Cook at 400F for 8-9 minutes. Repeat with the second batch.

    I am amazed by how well air fryers fry and much healthier at that. Another idea for veggies are to mix them with fruits in smoothies
