Shrimp and Pineapple Fried Rice

Shrimp Fried Rice

If you love my pork belly fried rice recipe, you will love this Pineapple Shrimp Fried Rice. Shrimp and pineapple are two ingredients that scream “summer” to me. I crave seafood during the summer and I don’t really know why. But once the weather gets warm, all I want is to be transported to a tiki bar, eat a seafood platter, and drink pina coladas.

I lightly seasoned these shrimp and cooked them before I cooked the rice. I moved them to a plate once they were done, cooked my fried rice and then added back my shrimp.

Adding eggs are optional, but if you like them in your fried rice, you should cook them right before you cook your shrimp and then add them to a plate and set aside while the rest of the meal comes together. They then get added back into the dish just before serving.

How do you make simple fried rice?

Good fried rice should be made with leftover rice. And if you don’t need to cook the rice the day of, then this meal becomes super fast and easy. If you ever have leftover white rice from an Asian restaurant, this is the perfect meal to make. It requires the leftover rice, green onions, shrimp, pineapple, egg, onions, Japanese BBQ Sauce, soy sauce, and sesame oil. I also like to add a little sriracha but that is entirely up to you.

What rice is good for fried rice?

I like to use Jasmine rice, but any medium or long grain rice would work. Leftover rice is the best to use because there is less moisture and the rice is less sticky.
