Baked Brie Caramelized Onion Dip

I’m not kidding when I say this is what I am bringing to every holiday gathering this year. If you love baked brie and french onion dip, then this dip is for you. This baked brie caramelized onion dip is a hot cheesy dip with caramelized onions and gruyere cheese. Once your onions are cooked, just combine them with some brie and shredded gruyere then pop it in the oven until melty and delicious.

Hot Onion Dip

The idea for this recipe started out as a hot onion dip. Most onion dips I see come from the refrigerated section of the grocery store or are made with a packet. They are delicious, don’t get me wrong, but I wanted to elevate this dip a little bit and make it warm.

I love to make a lot of baked bries around the holidays too, so I thought what if I remove the rind, and combine it with some caramelized onions to make it a delicious warm and gooey dip. Then I added some shredded gruyere and the rest is history. I was stunned by how delicious it was and I don’t know why I was so stunned because I already know that warm brie and caramelized onions are amazing on their own so obviously they would be fantastic together.

I served this baked brie and caramelized onion dip with some thick cut potato chips, but it would also be great slathered on some fresh bread.

Caramelized Onion Dip

The base of any good caramelized onion dip is caramelized onions, so you need to make sure to really take the time to caramelized these onions well. My trick to caramelizing onions is to make about 5lbs of them at a time in a slow cooker. Here is the recipe for my slow cooker caramelized onions. I cook them overnight so that I do not need to deal with them much. Once they are done, I store them in my freezer in some silicone freezer cubes. This way I have a caramelized onion anytime I need one.

If you only want to make your onions in a small batch for this recipe, you will need 1 large onion, 1 tbsp olive oil, 1/2 tbsp of salted butter, plus a pinch of salt. You should cook them on low heat, stirring frequently until they are nice golden brown. Do not let them burn. It will take about 45-50 minutes. Set them aside.

Once you make your onions, the rest of this baked brie and caramelized onion dip is pretty easy to make. You can use your favorite brie. I use triple creme brie because I love the creaminess and flavor, but it tends to be a little more oily than the rest which isn’t great in this dip. You will need about 10 -14 ounces of brie. Then, you want to make sure you remove the rind because the rind will not melt. I just use a sharp knife to cut around the exterior. Then, add the creamy brie to a small oven safe dish.

Baked Brie Dip with Caramelized Onions and Gruyere Cheese

This dip is absolutely delicious. The sweetness of the onions goes so well with the creamy brie and nuttiness of the gruyere cheese. I served my dip with thick cut potato chips, but sliced baguette would also be perfect.

This hot onion dip uses very few ingredients and has so much flavor. I also added a little garlic powder and a tiny bit of seasoning salt to the dip too before I bake it. Bake this dip at 400F for about 20 minutes and then serve immediately. You can definitely prep this dip the night before and then bake it the next day.

How to make Baked Brie and Caramelized Onion Dip

INGREDIENTS  

  • 1 large yellow onion
  • 1 tbsp olive oil
  • 1/2 tbsp salted butter
  • 10-14 oz Brie rind carefully removed
  • 3/4 cup shredded gruyere I used gruyere swiss cheese blend
  • 1/4 tsp garlic powder
  • 1/4 tsp seasoning salt Lawrys
  • 1/4 tsp sea salt

INSTRUCTIONS 

  • Caramelizing the onions is easy, but it takes about 45 minutes of frequent stirring. Cut your onion in half, and then slice each half into thin thin slices. Add the slices to a pan on medium low heat with butter, olive oil, and 1/4 teaspoon of sea salt. Stir frequently for about 45 minutes until onions are a deep golden color.
  • Cut the rind off of your brie and add the brie to a small oven safe baking dish
  • Once the onions are done caramelizing, add the onions on top of the brie, followed by 1/2 cup shredded cheese, the seasoning salt, and garlic powder.
  • Preheat your oven to 400F
  • Cook for 5 minutes and remove from the oven so that you can mix the brie and onions around. 
  • Once it is well mixed, add remaining shredded cheese on top and add it back to the oven. Cook for an additional 15-20 minutes or until the top is bubbly and light golden brown.
