Guacamole Nachos

Nacho chips topped with melted cheese and freshly made guacamole. These guacamole nachos are simple to make, filling, and absolutely delicious. An amazing appetizer to make for gameday or any day!

How do you make Guacamole?

Raise your hand if you have eaten guacamole and chips for dinner at some point in your life. <raising my hand proudly> Well, now let me show you how to make this meal even more delicious by adding some melted cheese to the mix. If you ever tried my Buffalo Chicken Nachos or my Mexican Street Corn Nachos, you know I take nachos very seriously, so I know you will love this recipe.

Best Guacamole Recipe

I have been told that I make amazing guacamole and I want to share all my tips with you. Making guacamole from scratch is really easy and no cooking is required. You chop a few ingredients and then you combine. Here are my tips:

For one, I do not add tomatoes to my guacamole. I think there is an internet debate about whether or not tomatoes belong in guacamole and I am definitely team “no tomatoes”. I love salsa and I love pico de gallo, but I don’t like tomatoes in my guacamole. My guacamole gets all of the acidity it needs from the lime.

There has to be a good lime to avocado ratio. A good ratio brings out a fresh taste, but also adds to the creaminess of the guacamole. I have used red onion and white onion, and I don’t see a huge difference there. The important part is to not use too much, and to make sure your onion is chopped very fine. All onion, garlic, cilantro, and jalapeno should be uniformly chopped. Oh, and salt! There must be salt!

I use a 1/2 teaspoon for 2 avocados, but some people even like a little more. I would start with 1/2 teaspoon and if you feel it needs more, then you can add it. This guacamole is the perfect topping for your Guacamole Nachos!

  • 2 Ripe Avocados
  • 1/4 of a cup of finely chopped onion
  • 2 large Cloves of Garlic
  • 1 small Jalapeño
  • 2 Limes
  • 1/2 tsp Sea Salt
  • 1/4 cup Cilantro Leaves loosely packed

Cheesy Delicious Guacamole Nachos

If you are making nachos, you are going to use a lot of cheese. Think back to the last time you ate or ordered nachos with a group of people. What is leftover at the end? Usually, all the chips that don’t have any cheese on them! These chips get picked over and sort of left behind. No one is interested in them. So, since you are making these yourself, you get to be in charge of the cheese.

Cheesy Guacamole Nachos

You will want to use a standard size baking sheet for these nachos. Lay your nacho chips out on the baking sheet. You can place them on top of parchment paper if that helps you with clean-up later. Then, evenly distribute your cheese on top of your nachos. Next, bake them at 350F until the cheese has all fully melted. Some people like to wait until the cheese gets nice and bubbly and starts to brown. Ensure the cheese is fully melted and then remove them at any time after that.

Put the baking sheet on a heat-safe surface, and then scoop the guacamole into the center of the nacho platter. This will make it easy for everyone to take a cheesy nacho and then scoop up some fresh guacamole. Fresh guacamole piled high in the middle of a cheesy nacho plate, what could be better than that?

How do you make Guacamole Nachos?

INGREDIENTS  

  • 1 Bag Restaurant Style Tortilla Chips
  • 10 oz Mexican Blend Shredded Cheese

Guacamole

  • 2 Ripe Avocados
  • 1/4 of a cup of finely chopped onion
  • 2 large Cloves of Garlic
  • 1 small Jalapeño
  • 2 Limes
  • 1/2 tsp Sea Salt
  • 1/4 cup Cilantro Leaves loosely packed

INSTRUCTIONS 

Guacamole

  • Chop up your onions, garlic, jalapeño, and cilantro. When you chop your jalapeño, you want to remove all of the seeds and throw those away. 
  • Scoop out your avocados and add them to a medium size bowl. 
  • Add your onions, garlic, jalapeño, and cilantro to the bowl.
  • Squeeze the juice of both limes into the bowl.
  • Add the salt and mix it up.

Nachos

  • Preheat Oven to 350F
  • Lay parchment paper out on a baking sheet and then evenly spread out the chips on the baking sheet.
  • Top all of the chips with a good amount of cheese making sure each chip has some cheese.
  • Bake for 15 minutes or until cheese is melted and bubbly
  • Remove the baking sheet from the oven and add the freshly made guacamole to the center of the nacho pile.
