Roasted Asparagus with Parmesan
This roasted asparagus with parmesan recipe will be your new favorite way to enjoy asparagus. Cooking the asparagus into the parmesan cheese creates cheesy little asparagus chips. They are crispy, crunchy, cheesy, and salty. These will absolutely melt in your mouth and I almost ate a full pound of them by myself. I serve this dish with my homemade caesar dressing, but you can also just squeeze some lemon juice on them and call it a day.

Asparagus Parmesan Bake
Parmesan cheese gives this asparagus a crisp and savory crust. It is such an easy side dish to make and can be enjoyed with anything from roasted chicken, pork chops, steak, and even pasta. In my recipe I used a combination of pre-shredded parmesan cheese and also freshly grated. You can use either or/or both!

Roast Asparagus with Parmesan
I feel as though a lot of people have had a real awakening when it comes to asparagus. Many of us grew up never trying asparagus because either our parents didn’t know how to cook it or our parents didn’t like them. I forgot when I tried asparagus for the first time, but I think I was in college. And I hated it. It was soggy and when I tried to bite it, it became stringy. That is why I love roasting them so much. I love when my asparagus is a little crispy.
Over the past decade, roasted asparagus has been a mainstay in my diet and so I decided to try adding a parmesan crust to it. My recipe for roasted brussels sprouts with parmesan has gone viral and I thought it would be great to try it with asparagus and broccoli.
I love serving these parmesan asparagus chips with my homemade caesar dressing plus an additional squirt of lemon juice. My recipe for homemade caesar dressing is below, but if you want to read more about it, you can read some on my recipe page for Caesar Salad Parmesan Bowls.
Caesar Dressing
- 3/4 cup mayonnaise
- 2 cloves garlic
- 1 tbsp lemon juice freshly squeezed
- 1 tsp dijon mustard
- 3/4 tsp worcestershire sauce
- 1/3 cup parmesan cheese shredded
- 1/4 tsp sea salt
- 1/8 tsp black pepper
How Long Should I Cook Roasted Asparagus with Parmesan In The Oven?
When I am making roasted asparagus with parmesan, I cook it in the oven at 400F for 17 – 20 minutes. Then I take them out of the oven, and leave them on the baking sheet untouched for another 5-10 minutes. This step helps them crisp up a little more.
I normally use parchment paper when roasting vegetables due to it being helpful to clean. If you have a reliable non-stick sheet pan, and you don’t mind the extra cleaning, you don’t need to use parchment paper at all. In fact, it will be slightly crispier if you do not use the paper.
Also, when you are reheating these, you can just throw them in an air fryer in a single layer. I reheat them at 375F for about 3-5 minutes. When you remove them from the heat, they will be bendable, but if you let them cool off on a plate they will crisp up again.
How to make Roasted Asparagus with Parmesan
INGREDIENTS
- 1 bundle asparagus A bundle is usually 16 ounces
- 6 oz shredded parmesan cheese You can also use gruyere cheese
- 1 tbsp olive oil or oil spray
- 1/4 tsp seasoning salt garlic salt would also work.
INSTRUCTIONS
- Preheat your oven to 400F
- Add parchment paper to a baking sheet and then add the shredded cheese in an even layer.
- Cut the tough ends off of the asparagus, and then cut the remaining stalks into 4 equal pieces.
- Lay the asparagus in rows on the shredded cheese.
- Spray the asparagus with oil or drizzle oil all over. Then, add your seasoning salt.
- Bake for 17-20 minutes and then let it cool, untouched, on the baking sheet so that it can crisp up.
