Creamy Bacon and Corn Dip

This creamy bacon and corn dip is a great addition to any appetizer line-up. It combines fire roasted corn, crispy pieces of bacon, garlic, green chiles, cream cheese, and shredded cheese. You can eat this dip cold or warm, but I prefer to bake it in the oven until it is super creamy and melty. Serve with some tortilla chips and enjoy!

I’ve shared many the past couple of years and they are always so popular on my blog because apparently, you all like creamy and cheesy dips too! This creamy bacon and corn dip is loaded with fire roasted corn, crispy pieces of bacon, garlic, green chiles, and cheese.

This corn and bacon dip is extremely easy to make. I like to use frozen corn in this recipe, because you can just pour it into the bowl straight from the bag. It will warm up while the dip is baking. I like using fire roasted corn in this recipe but you can use any type of frozen corn you like.

The only ingredient that should be prepped ahead of time is the bacon. You should cook the bacon ahead of time so that it crisps up. You can also buy fully cooked bacon if you are really short on time.

Corn and Bacon Dip in the Slow Cooker

I like using my slow cooker to make dips sometimes instead of taking up space in the oven. This creamy corn and bacon dip comes out great in a slow cooker and is super easy to throw together.

You can easily make this delicious dip in the slow cooker or crock pot. First, lightly spray the bottom of your slow cooker or crock pot with a cooking spray like olive oil or avocado oil. Then, add all ingredients except for 1/2 cup of cheese. Then, heat it up on low for about 2 hours, stirring every 30 minutes. Once the dip is all melted, add the top layer of shredded cheese and add the cover back on till the top layer of cheese melts.

How to make this Creamy Bacon and Corn Dip

INGREDIENTS  

  • 8 oz cream cheese room temperature or slightly warmed in a microwavable safe bowl
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 4 cloves garlic minced
  • 4 oz green chilies canned
  • 16 oz frozen corn fire roasted
  • 12 oz bacon chopped, cooked, and drained
  • 12 oz shredded cheese I used a mix of cheddar cheese and monterrey jack
  • pickled jalapenos optional

INSTRUCTIONS 

  • Chop your bacon into 1 inch pieces and cook in a pan on medium heat until crispy. Add it to a paper towel lined plate to drain
  • Preheat oven to 350F
  • Mince your garlic
  • Combine all ingredients in a large bowl except for 1/2 cup of cheese and optional jalapenos.
  • Once the mixture is fully combined, add to a baking dish and top with remaining shredded cheese. 
  • Bake uncovered for 30 minutes. Top with pickled jalapenos. Serve with tortilla chips or crackers.
