How to Make Creamy Polenta from a Polenta Tube
Cajun Shrimp and Creamy Polenta! I’ve been trying to eat more seafood lately so I decided on some saucy cajun shrimp with a creamy polenta base. I love creamy polenta! So comforting! It is just ground corn, so if you love corn, you would love polenta. I made this creamy polenta from a polenta tube. I have only been shopping at Trader Joes lately since the quarantine started. They only sell polenta in a tube. It is nice if you wanna bake your polenta, but I was in the mood for creamy polenta. So, I am going to share how I created this creamy polenta from a polenta tube.
What is Polenta?
Polenta is a dish made from creamy cornmeal. The corn is finely processed and then added to a liquid to create a creamy consistency, much like mashed potatoes. It originated in Italy and is now a staple in many Italian American households. It is very similar to grits, which is eaten frequently in the Southern part of the United States.
Ingredients
- 1 16oz Tube of Polenta
- 1 Cup Broth I used Chicken Broth
- 2 tsp Olive Oil
- 1/3 Cup Shredded Parmesan Cheese You can use more! 🙂
- black pepper to taste
Instructions
- Dice up the Polenta Log
- Add diced Polenta to a saucepan with Broth and Olive Oil. Cook on medium heat and stir frequently with a whisk until fully combined. About 10 minutes
- Remove the saucepan from the heat and add some black pepper and the parmesan cheese. I didn’t use a whole lot of cheese, so if you love cheese, I suggest you add as much as you like. Stir until combined.
- Serve as a side with your favorite meal, or eat it just as it is!

Turned out really good! I used an immersion blender to get it really creamy and substituted goat cheese for parmesan. Delicious!

I wanted polenta creamy like grits so of course good ole Google brought me here. I made it and added roasted mushrooms and it was delicious.

Initially, I was very skeptical of this recipe. I am not a great cook, but what I do make, is great. Currently there has been a shortage of cornmeal in my area for several weeks, so I finally broke down and bought a tube of polenta, sorry grandma!! I estimated the measurements, because I did not want to try to use the entire tube again because there is a shortage, and I did not believe I could make creamy polenta from this tube. It turned out delicious!

This recipe is only to show you how to make creamy polenta from a polenta tube, but I can tell you how I made these shrimp. I rinsed and thawed frozen shrimp, patted them dry with a paper towel and then sprinkled them with some old bay seasoning. Then, added 1 tbsp of oil and 1 tbsp of butter to a pan and heated it. Once the pan is hot, cook the shrimp for two minutes per side. Add them to a plate while you make your polenta. Combine when done.
