French Toast with Caramelized Peaches

Late summer is here and this French Toast with Caramelized Peaches is the perfect way to celebrate those seasonal peaches. Peaches are my favorite stone fruit and they really make the tastiest topping for french toast. I made a very simple caramelization using maple syrup, butter, vanilla, and cinnamon and it took about 5-6 minutes. I added them on top of my brioche french toast, and then topped it all off with some delicious whipped cream.

Allison and I spent the weekend glamping at Autocamp(a luxury camp site) and this is one of the breakfasts I made us using a cast iron pan and a grill. I always feel a little out of my element grilling outside instead of a kitchen, but since I have a gas stove, there really isn’t much of a difference. I guess the only difference was the fact that I was outside in nature, as opposed to my kitchen, which actually feels so nice!

This breakfast is a great easy recipe to make while camping. I honestly love camping, and this is a great one pan recipe to start your day. Most people think of hotdogs and smores when they think of camping, but you can cook the same type of food that you enjoy at home if you have the right type of pans and utensils. This recipe for French Toast with Caramelized Peaches is the perfect late summer camping breakfast and it is a true treat!

Whenever I am grilling, I really make an effort to make sure all of my ingredients are measured out and cut prior to starting to cook. This makes the rest the whole process go so much smoother. Anything that gets added to a pan at the same time, can start off in the same bowl. Then when I am ready for those ingredients, I just add them to the pan when needed.

Can I use canned peaches instead of fresh peaches?

Yes you can, but when peaches are in season, I highly recommend the fresh variety. If you are using canned peaches, I would omit the maple syrup since they already have a syrup. Just add the butter, vanilla, and the cinnamon.

Ingredients for French Toast with Caramelized Peaches

6 slices Brioche Bread

2 Eggs

1/4 cup Half and Half

1 and 1/2 tsp Vanilla Extract

3 Ripe Peaches, peeled, pitted, and sliced

3 tbsp Maple Syrup

1/4 tsp cinnamon

sea salt

whipped cream

How to make French Toast with Caramelized Peaches

Peel, Pit, and Slice all peaches. Add to a bowl with the maple syrup, 1/2 tsp vanilla extract, and 1/8 tsp of cinnamon. Set Aside.

In a separate bowl, combine the eggs, half and half, 1 tsp of vanilla, and 1/8 tsp of cinnamon.

Heat a large skillet on medium heat and add 1 tbsp of butter

Dunk a slice of bread into the egg mixture, and then add it to your hot pan. Repeat with he rest of the bread. You may need to cook this in two batches.

Once bread is golden brown on both sides, add to a plate and set aside.

Add the remaining 3 tbsp of butter to the pan, and once it melts, add the peach mixture to the pan, mixing every minute or so.

Add a pinch of sea salt to the peach mixture and mix.

Cook for 5 minutes and then remove from the heat. Add as a topping on two slices of french toast, and then top with whipped cream.
