Savory Chicken Meatballs

Most of my meatballs are savory, but I named these as such because they remind me of Thanksgiving. I used poultry seasoning which is like the ultimate savory spice blend in my opinion. It consists of sage, thyme, rosemary, and all those wonderfully savory herbs typically used during the Holidays. These taste sooo good, and if you are one of those people who likes their holiday poultry with a side of cranberry sauce, I bet they would taste wonderful with that too. I paired this with some Butternut Squash Risotto, which I bought from Trader Joe’s. It is creamy with a hint of sweetness, but it’s made with cauliflower and squash so I feel good about it. I haven’t yet tried making a veggie rice risotto without dairy, but it is next on my list. Anyone try this? Is it worth trying to make?

Ingredients:

  • 2lbs Ground Chicken
  • 1/3 cup thinly sliced green onions (just the greens)
  • 1 tsp salt
  • 2 tsp poultry seasoning
  • 3/4 cup almond flour
  • 3/4 cup nutritional yeast
  • 3 tbsp olive oil

Directions:

  1. Preheat oven to 400°F
  2. Combine ingredients in a bowl.
  3. Line a large baking sheet with parchment paper.
  4. Form meatballs and arrange on a baking sheet.
  5. Bake at 400 for 30 mins
