Spinach Artichoke Puff Pastry

My mom has been an appetizer legend for as long as I could remember. She can make anything…Anything! She used to make the most amazing warm garlic artichoke dip, that made me want to suddenly eat veggies. We kept that appetizer in our rotation for years, and then I built upon it one year by adding spinach. I now use this dip to stuff various things, like these puff pastry cups. Puff pastry is incredible. ⁣

I love the crunch and buttery-ness (is that a word) of puff pastry. I normally buy my puff pastry from Trader Joe’s because they sell it for the best price, however it is a seasonal item there. Knowing it will only be available around the holidays, I always buy 2 boxes. I use one box during the holiday season, and I use the other box when I am recipe testing for the holiday season during the late summer.

I also have a recipe for Spinach Artichoke Stuffed Mushrooms if anyone you are cooking for is gluten free, or just would prefer to eat mushrooms instead of puff pastry. The filling for the mushrooms is the same as for these puff pastry bites, so you can just double the filling and make both.

Spinach and Artichoke Dip

In order to make spinach artichoke bites, you need to first make this delicious Spinach and Artichoke Dip. Truthfully, it was dips like this that made me realize I do like vegetables. I understand that the dip isn’t the most healthy because of all the cheese, but it truly became a pathway for me to appreciate roasted vegetables on their own.

To make spinach and artichoke dip, you will need some cream cheese, mayonnaise, canned artichokes, frozen spinach, mozzarella cheese, shredded parmesan cheese, garlic powder (or fresh minced garlic), salt, pepper, and a little bit of hot sauce.

I have been making the dip this way since 2011. It was one of the first things I made when I moved into my first studio apartment. Also, I always bake my spinach and artichoke dip. There is nothing like hot and bubbly spinach and artichoke dip.

Can you make Spinach Artichoke Bites in a mini muffin tin?

Yes, to make larger cups in a cupcake/muffin tin, cut the puff pastry into 16 equal 4×4 squares. To make smaller cups in mini muffin tin, cup the puff pastry into 24 2×2 squares. After you cut the squares, put each square into each spot of the cupcake/muffin tin. It is ok if the corners hang over. Push down on the pastry to make sure the bottom is flat on the tin. Then, fill each spot 3/4 of the way up with the spinach and artichoke dip. The pastry will puff up as it cooks. Add a bit more cheese to the top of each one.

Spinach Artichoke Bites in Puff Pastry

Ingredients  

  • 2 sheets Puff Pastry
  • 8 oz Cream Cheese Thawed
  • 1/2 cup mayonnaise
  • 15 oz Canned Artichoke Hearts chopped
  • 15 oz Frozen Spinach thawed and drained
  • 1/2 cup Mozzarella Cheese shredded
  • 1/4 cup Parmesan Cheese shredded
  • 3/4 tbsp Garlic Powder or 5-6 garlic cloves, minced
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • hot sauce a few dashes of it, optional

INSTRUCTIONS 

  • Preheat Oven to 400°F 
  • Make the spinach and artichoke dip by adding all of the ingredients, except for the puff pastry, in to a bowl and combine. It is best that you use cream cheese at room temperature so that it is easier to mix. Set the dip aside as you work on your puff pastry.
  • Roll out the puff pastry slightly
  • To make larger cups in a cupcake/muffin tin, cut the puff pastry into 16 equal 4×4 squares.To make smaller squares in mini muffin tin, cup the puff pastry into 24 2×2 squares
  • Put one square into each spot of the cupcake/muffin tin. It is ok if the corners hang over. Push down on the pastry to make sure the bottom is flat on the tin.
  • Fill each spot 3/4 of the way up with the spinach and artichoke dip. The pastry will puff up as it cooks. Add a bit more cheese to the top of each one.
  • Cook for 15-17 minutes, or until pastry looks puffed and golden, and dip is bubbly and golden. Check on it after 15 minutes to make sure it is not cooking too quickly.

  1. do you use a GF pastry puff and if so, where do you find it?

      GFree Foods makes one and they sell their products at Wegmans. I am currently using just regular puff pastry.
