Pizza Meatballs
Pizza Meatballs are here!! I made these yesterday while filming my first IGTV. The video was only 2+ mins long because its social media and we all don’t have the longest attention span..but in reality the meal took me less than 30 mins to make. I chose to use ground chicken to lighten up these meatballs, but pork, turkey, or beef can easily be substituted. Pizza and Meatballs are two of my favorite things, so it only made sense to combine the two. Then, I went one step further and added some pepperoni.
Pepperoni is my favorite pizza topping which is probably Allison’s least favorite thing about me. Her family grew up eating veggies on their pizza so she is a little offended by my love of pepperoni. But…she married me..so now she is stuck with pepperoni for life! If you do not like pepperoni, you can omit this from the recipe, or you can add your favorite pizza toppings inside instead.
Is it better to bake or fry meatballs?
I have tried both ways, and truthfully I like a combination of the two. I love to brown my meatballs on the stove first in a cast iron pan, and then finish them in the oven. This ensures they cook through without burning.
Ingredients for Pepperoni Pizza Meatballs
1 lb Ground Chicken
6 oz Sliced Pepperoni diced into small pieces
1/2 cup Shredded Parmesan Cheese
3/4 tsp Salt
1/4 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Dried Basil
1 tsp Dried Oregano
1/2 cup Panko, Gluten Free Panko, or Almond Meal
1 Egg
16 oz Tomato Sauce
4-8 oz Low Moisture Mozzarella in a block so that it is easy to cut into slices
INSTRUCTIONS
Mix together all ingredients besides sauce and mozzarella cheese in a bowl
Roll into meatballs. You should make around 15 meatballs
Heat 1 tbsp cooking oil in a large pan. Once it is hot, add your meatballs
Cook for 8 minutes, making sure to brown all sides. Meatballs will finish cooking under the broiler.
Turn on your oven broiler.
Pour sauce into a cast iron pan, or a pan that is oven safe.
Slice mozzarella cheese into thin slices. Cut in half. Place a slice over each meatball. Put two slices on each meatball if you feel wild. 🙂
Place meatball pan under the broiler and cook until the mozzarella had melted, brown, and bubbled.
