Orzo Salad with Feta

This orzo salad with feta cheese has warm orzo and warm grilled chicken mixed with a ton of feta cheese, fresh tomatoes and cucumbers. I added a little bit of red onion for the taste, but you can omit this if you don’t like them, or you can double it if you do like it.

Orzo Salad with Feta

I always love to think of things to make for BBQs that aren’t hamburgers or hotdogs, but are super easy to make. This recipe makes A LOT, which is great because we like to eat it for our work lunches through the week. This dish can be eaten warmed up or cold which makes it super versatile depending on how much time you have.

Should I eat Orzo Salad with Feta hot or cold?

I love this dish served with warm orzo and warm grilled chicken, but I keep the rest of the ingredients cold when I am serving this fresh. When I take this dish for lunch, I either eat it cold, or I put the whole thing in the microwave for a little bit just to take the chill out. It is delicious both ways!

Is Orzo a pasta or a rice?

Orzo is a small type of pasta, even though it resembles rice.

INGREDIENTS  

  • 12 oz Premade Grilled Chicken I buy from Trader Joes, but you can cook your own grilled chicken and add it to this recipe
  • 16 oz Orzo cooked
  • 6 oz Feta Cheese
  • 1/4 cup Red Onion chopped very fine
  • 1.5 Cups Persian Cucumbers chopped
  • 2 cups Grape or Cherry tomatoes halved
  • 2 tbsp Olive Oil

INSTRUCTIONS 

  • Cook the Orzo per the directions on the package
  • Chop up the grilled chicken and heat it in a pan
  • Once the orzo is cooked, drain it, and then add it to a big bowl. Pour the olive oil on top, and mix it around.
  • Add the grilled chicken to the bowl, followed by the cucumbers, tomatoes, red onion, and feta cheese. Mix it around until fully incorporated

    yum! my mom makes something similar too. this worked great with a few things – I don’t do dairy, so added violife feta and red wine vinegar. I keep the chicken separate or leave it out and eat it all week in the summer as a side salad/dish! thanks for the recipe.
