| LATKE WEEK | 🎉 DAY 5! Do you prefer your latkes with Apple Sauce or Sour Cream?? My final latke recipe this week is my Cauliflower Latke. This latke is so easy to make and requires zero grating. The inspiration for this recipe comes from @myheartbeets #paleo naan! I added some cauliflower rice and @primalpalate seasoning to almond flour, tapioca flour, and coconut milk and created a delicious cauliflower latke…perfect for this year’s Hanukkah feast.
2 bags frozen cauliflower rice
1/2 cup blanched almond flour
1/2 cup tapioca flour
1 cup coconut milk
1 tsp garlic and herb seasoning
1/8 tsp black pepper
3/4 tsp salt
1/2 tsp garlic powder
1 tsp oil
- Cook cauliflower rice in a pan on medium heat, until all water is evaporated.
- Combine cauliflower rice with all of the ingredients in a large bowl.
- Take a 1/4 cup of the batter and cook on a greased pan on medium heat for 5 mins each side.
- Add latkes to a baking sheet and bake for 15 minutes at 375°F
