Tortellini Pasta Salad
This Tortellini Pasta Salad is for all the pasta salad lovers!! This meal takes about 15 minutes to cook, seriously. I used my favorite already grilled chicken and chopped it up to add to the meal. Then, I mixed it with cheese tortellini, pesto, juicy grape tomatoes, and mini mozzarella balls. This is perfect for an easy summer meal prep or a great dish to take to a summer BBQ. I hope you love it as much as my family did.
What is inside a Tortellini?
Traditionally, tortellini is filled with meat, but there are also vegetarian versions filled with cheese or vegetables and cheese. In this dish, I used cheese ravioli and then added grilled chicken to the meal.
What goes with Tortellini?
Tortellini goes well with a sauce and a protein. In the winter tortellini is commonly eaten with meatballs and a red sauce, but in the summer I opt for something lighter. This pasta salad is delicious and can be eaten hot or cold.
INGREDIENTS FOR TORTELLINI PASTA SALAD
- 10 oz Cheese Tortellini boiled
- 12 oz Grilled Chicken I buy it already cooked and then heat it up
- 8 oz Mozzarella Balls Ciliegine
- 10 oz Cherry Tomatoes halved. You can use more or less depending on how much you like tomatoes
- 2-4 oz Pesto You can use your favorite variety. I would add three tablespoons and then see if you like how saucy it is. Add more if needed.
INSTRUCTIONS
- Boil the tortellini until they float. Drain and put into a bowl.
- Heat up or cook grilled chicken and dice them into 1″ bites
- Pour the pesto over the tortellini, followed by the chicken, halved tomatoes and mix. Add more pesto if needed.
- Add in mozzarella and give it a good mix. This dish can be eaten warm or stored in the fridge and then eaten cold.
