I love this recipe so much because of all the different flavors. You’ve got squiggly ramen noodles soaking up a savory-sweet peanut sauce, crisp-tender broccoli adding freshness, and edamame bringing a subtle nuttiness and extra protein. The cooked shrimp absorb flavor easily, making them the ideal partner for the flavorful sauce.

The peanut sauce is what ties everything together. It’s creamy, slightly sweet, and just enough tang to keep things interesting. Think peanut butter, soy sauce, garlic, ginger, a splash of vinegar, and a hint of sweetness. They may be simple ingredients but they create something surprisingly complex.

I think the best part of this recipes is that you can use those really cheap packets of ramen noodles in a fun and creative way. Also, using cooked shrimp really takes the guess work out of this recipe. Shrimp is really easy to cook, but a lot of people get nervous about cooking it, so this recipe will ease your mind. When the sauce coats the ramen noodles, it transforms them from simple to deeply satisfying. Add in juicy shrimp, crisp-tender broccoli, and buttery edamame, and you’ve got a bowl full of texture and flavor.

Peanut Sauce with Ramen Noodles and Shrimp

If you’re looking for a meal that feels both cozy and bold, this shrimp ramen with peanut sauce, edamame, and broccoli delivers in every bite. It’s the kind of dish that brings together pantry staples and fresh ingredients into something that tastes restaurant-worthy, but comes together in your own kitchen without much fuss. Here is what you need to make this recipe:

  • Peanut Sauce – you can use a store-bought version or you can make my quick peanut sauce. In a bowl combine 2 tbsp soy sauce, 2 tsp maple syrup(or honey), 3.5 tbsp sweetened peanut butter, 1 tsp vinegar, 1 tsp sesame oil, 1/3 cup of water
  • Ramen Noodles – I bought the cheapest ramen packets I could find and just tossed away the flavor packet.
  • Shrimp – I used cooked shrimp for this recipe and it was perfect. Just make sure you thaw it before starting this recipe.
  • Vegetables – You can use any vegetables in this recipe but I really love the combination of edamame and small broccoli florets, mainly because I know my kid will eat both of them.
  • Miso Ginger Broth – I bought this at Trader Joe’s but other grocery stores have a version as well. If you cannot find this, just use chicken broth but you will need to add some additional flavor to it.
  • Ginger/Garlic – A must! Do not skip!
  • Soy Sauce – I let my shrimp marinate in a little soy sauce and green onions before I use it in this recipe.

How to make Shrimp with Ramen Noodles in a Creamy Peanut Sauce

INGREDIENTS  

  • 1 cup store bought peanut satay saucesee note below if you want to know how to make a quick homemade peanut sauce
  • 2.5 cups miso ginger broth can also use chicken broth but will then need to add additional ginger
  • 3 packs ramen discard the seasoning packet
  • 8 oz cooked shrimp thawed
  • 1 cup edamame without the shell
  • 2 cups broccoli florets cut them up smaller if they are on the bigger side. 
  • 2 cloves garlic minced
  • 2 tsp grated ginger
  • 1 tbsp soy sauce
  • 4 green onions diced with dark green parts separated from white and lighter green parts.

INSTRUCTIONS 

  • Prepare your green onions by separating the dark green parts from the white and lighter green parts. Finely dice them and leave them in two different piles.4 green onions
  • Put the shrimp in a bowl and add soy sauce and 1 tbsp of the darker green onions. Stir1 tbsp soy sauce, 8 oz cooked shrimp
  • If you are preparing your own peanut sauce, do that now using the note below.
  • Add 1 tbsp of oil to a large pan and heat it on medium low heat. Add your white and lighter green onions to the pan and stir. Cook until they are lightly browned.
  • Add your peanut sauce and broth to the pan and then place your ramen noodles in the pan. 1 cup store bought peanut satay sauce, 2.5 cups miso ginger broth, 3 packs ramen 
  • Add your edamame, broccoli florets, garlic, and ginger to the pan and cover the pan. Cook for 5 minutes. 1 cup edamame, 2 cups broccoli florets, 2 cloves garlic, 2 tsp grated ginger
  • Remove the cover and gently stir the noodles. Add the cooked shrimp and cook for an additional minute or two, making sure everything is covered with the sauce. Once the noodles are completely softened the meal is ready.
