Irish Potachos
Irish Potachos are a wonderful way to use up leftover corned beef or a good reason to buy corned beef in the first place! These lasted about 5 minutes! These were inspired by the Potachos at @stuffyerfacenj in New Brunswick, NJ! I have the best memories at that place and It was a delight to create these! Irish Potachos are a version of Nachos using ingredients that are popular around St. Patricks Day (Irish Holiday)
I used my Instant Pot Corned Beef recipe to make my corned beef, and then I made these Irish Potachos with my leftovers. Here is my recipe for Instant Pot Corned Beef
How do you make nachos?
To build the nachos or potachos, place a layer of chips on a platter or plate. Top the chips with a layer of the meat, then all but 1/4 cup of the cheddar cheese. Add another layer of chips, another layer of meat, and the rest of the cheese.
Ingredients:
•3 Large Potatoes, Cut into thin slices (I used a mandolin on level 3)
•7oz Irish Cheddar
•Leftover Corned Beef, chopped
•Avocado
•Green Onions
•Avocado Oil(or other oil to roast the potatoes)
Directions:
- Rub oil over potato slices, season with salt, and bake them in a single layer at 400F until golden brown(about 25 minutes)
- Shred the cheese
- Once potatoes are brown, remove them from the oven. Let them cool slightly so that they can crisp up further.
- Top with chopped corned beef pieces and cheese
- Put back in the oven until cheese melts
- Remove from oven, top with green onions, and avocado!
What goes on nachos first?
Build them on a cookie tray in layers–first are the chips, then the meat, and then the cheese. Then add two more layers. Put them in the over until all of the cheese is melted. Then take it out of the oven, top it with fresh ingredients like green onion and avocado and enjoy!

Ingredients
- 3 Potatoes Large
- 7 oz Irish Cheddar
- Corned Beef Leftover, works best
- 1 Avocado
- Green Onions
- Oil I used Avocado Oil
Instructions
