Vegan Queso
I am always looking for ways to create dairy-free versions of my favorite food. I love real cheese, but I definitely feel better with less of it in my diet. I cannot even being to count the hundreds of bowls of spicy queso dip I probably consumed in my lifetime. I love dipping chips, tortilla chips, pretzel bites, etc in warm spicy cheese and now I can do it in a plant-based version of the dip. You can try my recipe as is or add more green chiles and some little sauteed jalapeños to the top for an added kick.
Ingredients:
2 cups boiled cubed potatoes
1 cup boiled sliced carrots
1.5 tbsp Green Chilies (can from TJs)
1/3 cup Oil (half avocado and half extra virgin olive oil)
1/2 tbsp apple cider vinegar
1/2 cup nutritional yeast
1/2 cup of water
1 tsp salt
2 tsps garlic powder
Directions:
1. Add all ingredients to a food processor
2. Process until creamy
3. Heat and Serve
