Waffles from Pancake Mix

This morning is fueled by Pumpkin Waffles, Chicken Apple Sausage, and Eggs…plus lots of coffee! Yesterday I played around with the Trader Joes Gluten Free Pumpkin Pancake mix because I wanted to make waffles! I wanted to know how to make waffles from pancake mix.

Is Pancake Mix the same as waffle mix?

Both waffle and pancake recipes share some of the same basic ingredients, like eggs, milk and flour, but their batters are not the same. The trick to turning the mix into waffle mix is adding a little bit more fat(oil or butter) and decreasing the liquid just a bit. Also, waffles are usually a tad sweeter, but you can fix that when you add your syrup! 🙂

Can I make waffles with pancake batter?

To use your pancake mix to make waffles, simply add 2-3 tablespoons of oil to your pancake recipe in order to use it as a waffle recipe. So, for every cup of pancake mix, just add 2-3 tablespoons of oil.

I used the Trader Joe's Gluten Free Pancake mix and turned it into Waffle mix

  • Waffle Maker

Ingredients
  

  • 2 Cups Gluten Free Pancake Mix
  • 1 Cup Water
  • 6 tbsp Coconut Oil, Butter, or Ghee
  • pinch of salt

Instructions
 

  • Mix batter well, and cook according to your waffle iron’s instructions.

Ingredients(makes 12 waffles using a 4-waffle square iron) :
2 cups mix
2 eggs
1 cup water
6 tbsp melted coconut oil, butter, or ghee
Pinch of salt

Directions: Mix batter well, and cook according to your waffle iron’s instructions. After they are done, I keep them in the fridge and toast during my mornings!
