These Shrimp Fajitas are fresh, smokey, and so satisfying. I remember going to Chili’s as a young teen, and thinking how amazing the fajitas smelled while I was chowing down on my chicken fingers and bottomless chips and salsa. The next time I went to Chili’s I ordered the fajitas and I fell in love with them. I love the combination of sizzling meat, peppers and onions, and soft flour tortillas. And the smell, ughhh, they smell soooo good! I wanted to create this recipe for Shrimp Fajitas as an easy weeknight meal that feels fancy but is so incredibly easy to put together. I have included skillet and sheet pan cooking instructions below so that you can get this meal on the table no matter what your schedule looks like.

Shrimp Fajitas with Avocado Crema

These fajitas taste amazing with an Avocado Crema that I made with avocado, sour cream, lime, salt, and water. It creates a beautiful and creamy base or topping for these fajitas. I love the way the lime flavor really kicks this dish up a notch. You can throw all the ingredients in a small blender.

Shrimp Fajitas Seasoning

The seasoning blend for Shrimp Fajitas is made with just a few easy to find spices. Salt, chili powder, chipotle chili powder, garlic powder, cumin, black pepper, salt, and chopped cilantro. I like the addition of the chipotle chili powder because it gives it that smokey grill flavor without having to use the grill.

Can you make Shrimp Fajitas on a Sheet Pan?

Yes, I have included directions below that detail how to cook this dish on a skillet or a sheet pan. I prefer my peppers and onions super soft so I like the skillet method best, but I like the sheet pan for convenience. I can cook everything at the same time and dinner comes together in less than 20 minutes.

Are Shrimp Fajitas Healthy?

yes! Shrimp is one of the healthiest options when it comes to fajitas, and the other ingredients are onions and peppers. Fajitas are normally served with flour tortillas, but you can use corn tortillas if you are gluten free, almond flour tortillas if you are grain free, or jicama wraps if you are low carb.

How do you Toast Tortillas?

I got a nice char on my tortillas for my photos by putting the tortillas directly over my burners of my gas stove. You have to act quick, so if flames scare you, definitely ask for some help from a friend. I use a silicone tipped tong to move the tortillas around so that the flame does not burn any one spot. Also, keep your flame low. Tortillas cook very fast! You can also try this same method over a gas grill!

These shrimp fajitas are fresh, smokey, and so satisfying. They are served with avocado crema in a soft flour tortilla.

Ingredients
  

  • 1 lb Shrimp I used frozen wild Argentinian shrimp
  • 10 Fajitas Size Flour Tortillas Similar to Street Taco size
  • 2 Bell Peppers sliced thin
  • 1/2 Yellow Onion sliced thin
  • 1/2 tbsp Oil
  • 1 Lime juiced
  • 1 tbsp Cilantro

Fajita Seasoning

  • 1/2 tsp Sea Salt
  • 1/2 tsp Chipotle Pepper Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Black Pepper

Avocado Crema (optional)

  • 1 Ripe Avocado peeled and pitted
  • 2 Limes juiced
  • 1/3 cup Sour Cream
  • 1/4 tsp salt
  • 2 tbsp Water plus a little more

Instructions
 

Skillet Method

  • Slice the Peppers and Onions thin and add to a hot pan with oil. Cook until peppers and onions start to char.
  • While the peppers and onions are cooking, thaw your shrimp, Put them in a colander and run cold water over them for 5 minutes.
  • Gather your spices. Add all the spices into a small bowl so they are ready once you add the shrimp to the skillet.
  • Add the shrimp to the pan, followed immediately by the spices and mix together with the peppers and onions. Add a generous squeeze of lime on top.
  • Cook the shrimp for a little under 2 minutes per side.
  • If you want to heat up your tortillas, add them to a sheet pan and heat them up at 350F for a few minutes.

Sheet Pan Method

  • In a large bowl, toss together thawed shrimp, thinly sliced bell pepper and onions, olive oil, and seasonings. If you want, you can skip the bowl and mix everything on the sheet pan and then toss it to coat.
  • Bake the fajita mixture in the oven at 450 degrees for about 8 minutes.
  • Then switch the broiler on and let the shrimp and bell pepper blacken a little for 2 minutes.
  • Remove Fajitas mixture from the oven and turn off the broiling function.
  • If you want to heat up your tortillas, add them to a seperate sheet pan and heat them up at 350F for a few minutes.

Avocado Crema

  • Add all ingredients to a blender and combine.

    These shrimp fajitas are perfect in every way! The shrimp’s seasonings are delicious and the avocado crema with the complementary lime juice included tops the shrimp off beautifully. It’s a quick easy meal that looks fancy enough to serve company.
    Definitely will be making it again and again!
