One Pot Beef Stroganoff

This One Pot Beef Stroganoff is a delicious and easy dinner recipe. Adults love it, Kids love it, Everyone loves it! I simplified this classic dish by using ground beef and lightened it up by using Greek Yogurt.

One Pot Beef Stroganoff makes creating a delicious dinner a breeze

Beef Stroganoff is almost like an adult version of hamburger helper. Normally the sauce is made in one pot, and the pasta is boiled in a different pot. This version makes it a tad easier and cooks everything together in the same pot. Egg noodles are iconic in American versions of beef stroganoff, so I knew I had to use them in my recipe.

I also chose to use ground beef because it is less fussy than other cuts of beef, and I know my toddler’s teeth can handle it. Also, ground beef is super easy to cook and there is no guessing game about whether or not it is red inside.

I like adding a little white wine in this dish because it gives it a more balanced taste. Adding wine to dishes always make it a bit fancier for me. If you have never cooked with wine before, don’t worry, the final dish does not taste like alcohol and it will not get anyone drunk. It is just a way to give this dish some added flavor.

I chose to use shiitake mushrooms in this dish because they are my favorite but cremini and baby bella mushrooms work really well too. The trick is to make sure you brown your mushrooms really well before adding the liquid. It will give the dish such a great burst of umami flavor.

What is stroganoff sauce made of?

Beef Stroganoff sauce is normally made with beef broth thickened with flour and sour cream. As much as I love sour cream, I don’t often have it in the house. I do, however, always seem to have greek yogurt and I love using it instead of sour cream. It also is a lot lighter than sour cream without losing any flavor or creaminess.

The sauce is also flavored with mushrooms, and some variations have mustard, paprika, or worcestershire sauce.

Ingredients for One Pot Beef Stroganoff made with Ground Beef

INGREDIENTS FOR ONE POT BEEF STOGANOFF 

  • 1 lb Lean Ground Beef 90% or 95% lean
  • 3 tbsp Butter
  • 10 oz Sliced Mushrooms
  • 1/2 Medium Onion diced
  • 3 Garlic Cloves minced
  • 1/2 tsp Paprika or Lawry’s Seasoned Salt
  • 3 tbsp flour
  • 1/4 cup White Wine
  • 4 cups Beef Broth low sodium
  • 1 1/2 tbsp Reduced Sodium Worcestershire Sauce
  • 1/2 tbsp Dijon Mustard
  • 8 oz Egg Noodles
  • 1/4 tsp sea salt
  • 1/2 cup Greek Yogurt

INSTRUCTIONS 

  • Add the button to a large skillet on medium heat. Once the butter melts, add the sliced mushrooms plus half of the salt and cook the mushrooms until they start to brown and crisp up
  • Add the diced onions, minced garlic and stir around. Then, add the ground beef, paprika, and the remaining salt. Cook until the beef is no longer raw.
  • Add the flour to the pan and coat the beef. Let the flour brown for one minute.
  • Add the wine and raise the heat to high. Let it start to boil so that you cook out the alcohol but keep the delicious wine taste.
  • Add the worcestershire sauce, dijon, beef broth, and noodles. Let the liquid come to a boil, then reduce the heat to low and cover. Cook for 8-10 minutes or until noodles are cooked.
  • Remove cover and turn off the heat. Add greek yogurt or sour cream and mix.
